Dr Ann Letellier pursues the mandate of the Research Chair in Meat Safety (RCMS) as a chair holder with the support of her team: Dr Sylvain Quessy, full professor and vice-dean for research & graduate studies, Dr Philippe Fravalo, researcher & professor, Dr Sylvette Laurent-Lewandowski, research associate, as well as a team of veterinarians, research technicians, post-docs, graduate students and trainees.

Collaboration with many specialists in public health and other researchers from the Faculty of Veterinary Medicine turn the RCMS to a multi-disciplinary center of expertise with both a nationally and internationally renowned reputation.

The RCMS team is teaching hygiene and food safety at the university, particularly for undergraduate students in food safety and technology certificate program: FSTC

RCMS governance

 

Ann Letellier


1987, graduated in microbiology from Université de Sherbrooke.
1989, Master’s degree in microbiology and veterinary pathology at the Faculty of Veterinary Medicine (FVM) of Université de Montréal (UdeM). She worked as a research assistant in the microbial protein purification laboratory at FVM.
1996 to 2001, started its own R&D and diagnostic laboratory.
2000, Doctorate in epidemiology and control of Salmonella in swine.
2002, orients her career at UdeM as a researcher and professor for the (RCMS) Research Chair in Meat Safety. Since October 2005, she has been the chair holder of the RCMS, funded mainly from chair members and diagnostic & research activities.
2011, received a grant of 2.2 M$ as a chair holder of the NSERC industrial research chair in meat safety.
As a researcher/professor, she supervises and co-supervises graduate students, M.Sc. and Ph.D., and postdoctorants candidates, on topics such as epidemiology, control and characterization of food pathogens. Lecturer and expert in meat safety on various committees and organizations, and has given conferences in several different countries. She also co-supervises a project funded by the Canadian International Development Agency (CIDA) which aims to improve food product safety and quality in Vietnam.

Sylvain Quessy


1984, graduated from Université de Montréal (UdeM). He worked as a veterinarian at a private clinic and for the Canadian Food Inspection Agency (CFIA).
1994, Ph.D in microbiology from the University of Montreal (UdeM). After that, he worked as a scientific researcher at CFIA and Health Canada on epidemiology and control of foodborne pathogens. He has been responsible for on-farm quality assurance programs in swine production and has participated at all stages of the CQA creation program as a scientific advisor and member of the advisory board of the Canadian pork council and CQA technical committee.
1999, associate professor at the Faculty of Veterinary Medicine at UdeM in St-Hyacinthe and holder of the Research Chair in Meat Safety. He supervises several graduate students working on the genetic characterization and control of foodborne pathogens in swine and poultry in a “from farm to table” approach.
2001, “Science Technology Award” from the Canadian meat Council who emphasized his outstanding contribution to progress in meat science.
2003, “Award of Excellence” from the Interprofessional Council of Quebec that awards an experienced professional in recognition of his excellent contribution to the profession and its development, as well as for his remarkable achievement towards the progress of the professional order of veterinarians.
2005 to 2010, Director of the pathology and microbiology department at the Faculty of Veterinary Medicine at UdeM
2010, Vice-dean for research and graduate studies at the Faculty of Veterinary Medicine

Scientific Advisor for several government agencies, professionals and producer organizations on the development of risk analysis and management policies of hazards for HACCP models. Recognized expert in microbiological risks in food for the World Health Organization (WHO). He represented the WHO on several international congresses on food and public health hygiene. He has also been involved in the evaluation and leadership of several technical assistance projects in public health at different countries. Since 2007, he led a major project ($16M over 6 years) of technical assistance to help the Vietnamese government to adopt good production practices for better food hygiene and quality in this country.
He is the author of several scientific papers and oral presentations on epidemiology and pathophysiology of Salmonella, Yersinia, Campylobacter, and Cryptosporidium infections.

Philippe Fravalo

1993, Master’s degree in cellular and molecular biology
1997, Doctorate in biological sciences
French researcher specializing in the transmission of foodborne pathogenic bacteria from primary production (poultry and swine) to food distribution, including meat cutting and processing. As a specialist in bacterial typing and screening, he has developed research programs aimed at establishing Salmonella and Listeria monocytogenes contamination risk factors in pig farms.
From 2004 to July 2008, in charge of the research and scientific and technical support team for the poultry and pig food hygiene division of the “Agence Française de Sécurité Sanitaire des Aliments”, in Plougragan. This establishment is the national reference laboratory for Salmonella and Campylobacter. In 2008, he joined the Research Chair in Meat Safety at the veterinary medicine faculty of UdeM in Saint-Hyacinthe to develop teaching and research activities, particularly on Campylobacter in poultry.

Sylvette Laurent-Lewandowski

1996 to 1998, Postdoctoral research trainee in virology at Université de Montréal, Faculty of Veterinary Medicine (FVM)
1998 to 2005, research assistant at the department of pathology and microbiology, virology section of the FVM: development of diagnostics for the detection of bovine viral diarrhea virus; optimization of vaccine adjuvants. Development of a prototype DNA-based vaccine against the bovine viral diarrhea virus. Coordinator of the project “Valorisation Recherche Québec “the FQRNT (2002 -2005).
2005 to 2007, research associate, bacteriology section. Coordinator at the Swine Infectious Disease Research Center (CRIP).
2008, research associate for the RCMS Research Chair in Meat Safety
She co-supervises students at master’s, doctoral and post-doctoral level programs, particularly in the field of veterinary vaccinology
