Transfer of Salmonella spp. in pig production, impact of intestinal flora components of the sow on the modulation of excretion of this bacterium Like the French expression says, everything is good in swine. That’s why we must ensure the safety of its meat. Despite the efforts of the swine industry, salmonellosis is still frequently associated with the consumption of pork. Indeed, this bacteria can be carried asymptomatically in pigs and contaminate the meat during slaughter. My thesis focuses on the study of the transfer of Salmonella between the sow, which can be a reservoir of the pathogen, and the piglet. I will also study the impact of the gut microbiota which is transferred from the sow to the piglet on the colonization and shedding of the bacteria throughout the production. By getting a better understanding of these phenomena, we will be better able to advise the industry on methods to implement to reduce contamination of animals on the farm and hence reduce the contamination of pork in your plate.
